Essential oils, also known as volatile or ethereal oils are aromatic oils extracted from plants. They can be found in different parts of the plants such as flowers, seeds, leaves, bark, fruits and roots.

Objectives: The study was conducted to establish evidence with the use of the essential oil extracted from jackfruit seeds as an antifungal agent.

Method and Results: The seeds were collected from Santa Rosa, LagunaThe seeds were washed, and oven dried prior to grinding. The ground seeds were subjected to Soxhlet extraction from Adamson University with 95% methanol as the solvent. The extracted essential oil was rotary vaporized and concentrated, removing all the excess solvent present. The essential oil was subjected to a series of tests in Adamson University- Chemistry Laboratory to determine its physicochemical properties. The specific gravity determined using the pycnometer method is 0.978. The rotatory power, determined with polarimeter, is 131 to 133. The refractive index is 1.547 to 1.549. The distillation range is 102 degrees C to 105 degrees C. The essential oil was submitted to Adamson University Technology Research and Development Center for gas chromatography and flame ionization detector (G-FID). The ester content as ethyl acetate was not detected as the limit of detection is 0.1 ppm. Alcohol as ethanol was found to be 0.78%. Aldehyde as glutaraydehyde is 0.34%, while phenol is the highest constituent at 1.88%. The ketone determined with the use of the USP method, Cassia flask, wat at 1.20%. The essential oil was soluble in petroleum ether, choloform, carbon tetrachloride, and ethanol, while it was insoluble in water. The minimum inhibitory concentration (MIC) was determined thru resazurin assay. Five concentrations, is 10mcg/mL, 50 mcg/mL, 100 mcg/mL, and 1000 mcg/mL were used to determine the lowest concentration that would inhibit fungal growth. All Fungi were inhibited at the lowest concentration of 10 mcg/mL.

Conclusion: The essential oil from the seeds of jackfruit (Artocarous heterophyllus Lam.) possesses antifungal property. Its inhibitory activity is not limited to dermatophytes and systemic fungi since it exhibited activity against both. It is most potent against Aspergillus niger, a systemic fungal pathogen classified as a monomorphic mold.
